We could argue this one until the cows come home, Teresa. For me, I would find it difficult to totally forego carbs, but there are very good reasons to check the origin of of your food and the conditions in which they were grown.
What I have learned to do first is banish for the most part, highly-processed foods. I'm sure I don't have to explain why. Doing that seriously reduces carbs.
Almost all fruit has been tampered with over time to make it sweeter and more tempting. The sugar count is much higher than it once was. I limit that. Shame, because I LOVE fruit.
For the most part I cook from scratch. I don't religiously count carbs, but I am mindful that too many of them just don't serve us well.
