That's lovely to know, Murielle. I grew up in Scotland a small country not renowned for its cuisine, let alone being as innovative as your mother. Pancetta wasn't a word on our lips, sadly. Isn't it interesting we were just across the sea from Europe and learned nothing about their cooking culture.

When we children got married, and learned to cook, my mother would come for dinner, get a recipe from the night, and next time we visited we got that same dish. That was actually nice.
