HI Roman, I just wached this YouTube conversation and I can't say I learned too much, but I need to find time to read further.

What I would rather share is my personal experience as a long-term distance runner. I actually had to give up because of the pain in my knees, and to be honest thought I would have to have knee replacements.

Wanting to avoid surgery, I started researching diets, and the ones that were carb loaded saw me in huge, unrelenting pain.

Eventually I stumbled over low-carb and gave it my best shot.

Within 3 weeks all pain was gone, never to return.

My husband also embraced the diet, and when he went for an annual physical, he was asked to make a consultation.

When he went in the doctor couldn't believe what he was seeing. His words, "Whatever you are doing, keep doing it."

At not time did he ask what he was dong. That would have been nice.

On medium I write about a friend whose whole family was riddled with ill-health, MS for her, a blood clot for her husband, one half-functioning kidney, for her eldest daughter, sever asthma for one daughter and skin issues for the youngest.

Their diet was far from optimal.

When they all changed their diet the outcomes were staggering...yes, low-carb. She no longer has MS. So what did she REALLY have?

We're all different, and we should pursue what works best for us.

I cook from scratch. I cook nourishing meals with fresh produce.

As far as I can, I avoid processed food. Sure, it's convenient, but I believe that as a society we are paying severely for that convenience.
