Dear Cooper,

If you're ever in the mood to, try some overdone (AKA, burnt ) bacon. There is nothing quite like it. I didn't stumble over this recipe on the internet. Rather I just burnt some bacon in the oven (I don't fry bacon I bake bacon ... get it ... bake bacon! ) one day.

I was so mad with myself, so I broke a little off and tasted it and that's when I discovered its joys.

I'm actually going to conduct an experiment on my next batch and will coat it in dark chocolate. I'm sure it will be a wow at my next cocktail party ... if i ever have one ... a cocktail party!

So meantime, why don;t you get Pat to ditch the air fryer, and bake some bacon, and see what you think.

Oh and by the way, get the fatty bacon, the stuff that has hardly any actual bacon. That is so good. Here in 'Downunda' it's called jowl bacon because it comes from those cute fat pig cheeks
